Grape Varieties Blend: Sangiovese 70%, Cabernet Sauvignon 30%
Vinification: Separate fermentation for each variety on controlled temperature (25° to 30° C) without ” governo”.
Maturation and Refinement: French Oak (Allier, Nevers, Tronçais, Vosges) 90% and American Oak (West Cumberland) 10% barriques, then long refinement in bottle (1 year).
Organoleptic Characteristics of the wine:
- Colour: Dark ruby red;
- Bouquet: Very intense, scents of black currant and other small fruits, toasted oak and spices;
- Flavour: Fresh start followed by supple sensations, great tannic structure, ending with licorish, very long persistence.
